Показана возможность корректировки аминокислотного состава кулинарной продукции на основе кукумарии, путем добавления компонентов наземного происхождения. Приведены характеристики БАД из мышечной ткани голотурий. Обоснованы условия рациональной переработки отходов от разделки трепанга и кукумарии с использованием протеолиза. Полученные продукты содержат гликозиды, аминосахара, коллаген и селен.</p></abstract><trans-abstract xml:lang="en"><p>The results showing the possibility of complex use of holothurians for obtaining food products, including biologically active additives (BAA) are presented. The possibility of adjusting the amino acid composition of culinary products based on cucumaria by adding components of terrestrial origin is shown. The characteristics of dietary supplements from the muscle tissue of holothurians are given. The conditions for the rational processing of waste from the cutting of trepang and cucumaria using proteolysis are substantiated.
