Abstract
The development of standard schemes for the control of technological processes for the manufacture of fish products is becoming particularly relevant in the framework of implementing the requirements of technical regulations for production processes, the safety of fish products and improving their quality. As a result of the analysis of the technology, the main points of control of the process of making frozen crab products were determined, the controlled parameters and their characteristics at each stage of production were identified. The developed scheme can be used as a basis for production control of the technological process of making frozen crabs.
